Superfood Toddler Approved Popsicle
We whipped these up this weekend and they were a big hit! Packed with electrolytes and all the superfood health benefits of chia seeds, they were an awesome way to sneak some goodness in my little miss. Also a big hit with the husband- he had six yesterday. And they're pretty too!
We also make popsicles with freezing my toddler approved green smoothie recipe too, if you need a little variety- but those aren't nearly as pretty!
Recipe:
1 and 1/2 cups of strawberries- can be fresh or frozen
1 and 1/4 cup of coconut water
A little drizzle of honey, if you want it
4 teaspoons of chia seeds
1 and 1/2 cut pieces of mango- again, fresh or frozen works!
1. Blend the strawberries with half the coconut water in your blender. Add a little honey if you want it to be sweeter.
2. Add two teaspoons of the chia seeds, mix, and set aside.
3. Blend the mango with the other half of the coconut water, and you can also add a little honey here if you want.
4. Add two teaspoons of the chia seeds, mix, and set aside.
5. Pour the two fruit mixtures into your popsicle mold (our is this one), alternating them so you get that marbled look, and freeze!
